Flower of salt

What is fleur de sel?

Fleur de sel, “flower of salt” in English, is the fine layer of salt that forms on the surface of the salt pans on warm, windless days. Most of the salt crystallises on the bottom of the pan. Only a small part stays on top of the water as a thin, flaky layer. These crystals are skimmed off by hand with a fine sieve.

Because only a little salt is gathered this way and the harvest depends on the weather, fleur de sel makes up just a small share of the salt harvest. The crystals are fine, slightly moist and dissolve slowly on the tongue. That is why it is not used for cooking but at the very end, directly on the finished dish.

Information about Fleur de Sel from Nin – Hand-Harvested Croatian Sea Salt

About the product

The Nin salt pans in Croatia

The Nin salt pans lie in a shallow lagoon near the town of Nin, north of Zadar on the Dalmatian coast. Salt has been produced here since antiquity. After a break of several centuries, the salt works were brought back into operation in 1954 and still work traditionally today: seawater evaporates in shallow pans, the sun and the bora wind from the Velebit mountains dry the salt, and it is harvested by hand.

How hand-harvested fleur de sel is made

Fleur de sel only forms on warm days without wind. A thin layer of fine salt crystals then appears on the surface of the pans. Early in the morning and in the evening it is skimmed off by hand with a fine sieve before it sinks to the bottom, and then dried in the sun. According to Solana Nin, their fleur de sel is also used in Michelin-starred restaurants.

Jute bag or jar

We stock this hand-harvested sea salt from Nin in two versions: a 150 g jute bag for the kitchen and an 80 g jar for the table. The contents are the same.

Frequently Asked Questions (FAQ)

What is the difference between fleur de sel and sea salt?

Both are sea salt from the same salt pans. Fleur de sel is the fine layer that forms on the surface of the water and is skimmed off separately by hand. Ordinary sea salt crystallises on the bottom of the pans and is coarser.

How do you use fleur de sel?

At the very end, over the finished dish: on a steak, grilled vegetables, fish, tomatoes, avocado or a slice of buttered bread. A pinch also goes well with chocolate and caramel.

Can you cook with fleur de sel?

You can, but the crystals dissolve in the cooking water and lose their texture. Our coarse sea salt from Nin is the better choice for cooking.

Why is fleur de sel so expensive?

It is harvested by hand, only when the weather is right, and only a small amount is gathered each time. That is why fleur de sel makes up just a small share of the salt harvest.

What is fleur de sel in English?

Fleur de sel means “flower of salt”. The name comes from the shape of the crystals, which form like fine flakes on the surface of the water.

Where does your fleur de sel come from?

From the Nin salt pans in a lagoon north of Zadar on the Croatian Adriatic, where salt is still harvested traditionally and by hand.

Does fleur de sel go with desserts?

Yes. A pinch of fleur de sel goes well with desserts made with chocolate or caramel. Sprinkle it on just before serving.

Jute bag or jar?

The 150 g jute bag is the choice for the kitchen and for refilling. The 80 g jar belongs on the table and makes a nice gift.

How do you store fleur de sel?

Keep it dry and tightly closed. Fleur de sel is naturally slightly moist and may clump a little – that is normal. Salt does not go off.
