What is a single-variety olive oil?

Single-varietal—also called monovarietal—means that the oil is made from a single olive variety. This is rather uncommon. Most oils on the market are blends, often made from several varieties and not infrequently from several countries, as this makes it possible to achieve a consistent flavor over the years.

A single-varietal oil does the opposite: it shows what a variety produces in a particular place in a particular year, with all the variations that entails. Leccino originally comes from Tuscany and is considered a hardy, frost-tolerant variety. In Istria, on the iron-rich red soil, it develops a distinctly fruitier profile and milder pungency than in its place of origin. The same tree, a different oil.

About the product

An Italian variety on Istrian soil

Leccino is one of Italy’s most widespread olive varieties and has been cultivated in Istria since long before today’s borders were drawn. For centuries, the peninsula was part of the Venetian sphere of influence, and the varieties migrated with it. What has changed is not the tree, but the location: terra rossa, an iron-rich red soil over limestone, combined with the Adriatic’s northernmost olive-growing area, where nights are cooler than in central Italy. The same variety therefore produces an oil with more fruitiness and less bitterness.

What the color means (and what it doesn’t)

Leccino oil is strikingly green. This is due to the chlorophyll content of the fruit at harvest time. It is important to note that the color says nothing about quality. In official sensory assessments, olive oil is tasted from blue glasses so that the color does not influence the evaluation. Green is a characteristic, not a seal of quality: attractive to look at, but not an argument.

Where does the Leccino variety come from?

Originally from Italy. It has been cultivated in Istria for centuries, where the red, iron-rich soil gives it a fruitier profile than in its region of origin.

What does acidity mean in olive oil?

It measures the proportion of free fatty acids and indicates how carefully the olives were harvested and how quickly they were pressed. Up to 0.80% is permitted for extra virgin olive oil. This oil is at 0.09%—around eight times below the limit.

What is the peroxide value?

It shows how far oxidation has progressed. Values of up to 20.0 mEq O₂/kg are permitted; this oil is at 3.1. Low values indicate freshness and gentle processing.

Is the oil cold-extracted?

Yes. The designation is legally defined and permitted only when the oil is obtained at below 27 °C through centrifugation or percolation—without the addition of heat that would alter its aromas.
